I was thinking about the "covering up" explanation too but holding it the way you described covers the penis up just as well, especially if you keep both hands on your penis so you are covered from both sides. Also makes it easier to direct the stream and shake off the last drops when you are done. If you hold the way the man does it in that video, the penis is covered from only one side. Not a urinal mat but over here we have these types of urinals in some mens rooms. The design is pretty old so it's getting pretty rare.
